Cooking update.
Have lasagna in oven.

I forgot to ask Jonathan to buy red peppers yesterday, but he did buy the optional zucchini, so I used that. It should add the touch of bitterness I want. Also, turned out I didn't have fresh garlic. This will not be a prize winning dish, but it should be edible.

The sauce is onions, sliced crimini mushrooms, a large zucchini, frozen spinach, pepper, lots of dried basil and oregano, and, yes. Garlic powder. *Sigh*. And I used no-boil lasagna noodles, so that part was easier.

I *hate* being sick. It should not be exhausting to make a sauce or construct a lasagna It really shouldn't.

I'm serving this with a plain green salad tonight. No blintzes. No cheesecake. I don't do those things anyway.

Chag sameach! My shul does cheesecake after the evening service, and I have promised myself that I will have one small piece. Or possibly two slivers of different kinds. I need fuel to keep me up all night studying. ;)

(Re emergency food-prep issues, maybe it would pay to have an uncooked cheese and/or spinach lasagna, frozen then removed from baking pan and wrapped in several layers of freezer bags, and some cartons of your favorite pareve/dairy soup & fruit-enchanced applesauce always in the freezer? Add a green salad -- which I'm sure your husband could toss together with no problem -- and a good purchased dessert, and you'd have a very nice dairy dinner for several, suitable for any occasion other than Pesach.)
