Your chili icon always makes me hungry. And I don't even do three-way (er -- not like that, as you say [g]); the starch in my three-way chili dish is rice, not spaghetti. BUT STILL.
Is this a formal culinary school degree/certification program or is this a more home cookery education thing? I'd love to go to cooking school. I was thinking yesterday how much I just really love cooking in a spacious, well-equipped space. I think I might be a little envious. ; )

It's a chef certification program affiliated with the boro community college.
It's a well-equipped space (they have the resources of a housewares store), but I wouldn't call it spacious. The twelve of us plus the chef, the assistants and the dishwasher barely fit.
Of course, I do all my normal cooking in an apartment kitchen. :)
