Spinach kugel

Spinach Kugel pareve/pesadich
1 red onion, choppped
1/2 1lb bag frozen chopped spinach, thawed
1/4 cup matzo meal
2 eggs, beaten
Optional: handful shelled pistachios
Nutmeg
Salt
Pepper
Oil for frying
Saute red onion in oil until soft and just starting to brown. Add to rest of ingredients. Mix with hands until combined. Put mixture into loaf pan. Bake at 350F for about an hour or until firm and slightly brown on top. Serves four.

if you add the optional pistachios, how would you use them? chopped up as a topping? added before or after cooking?

Date: 2006-01-11 12:51 am (UTC)I know I'm hungry when I catch myself thinking up recipes when I'm not actively trying to plan a meal. I think it's an effect of hungry + not eating, since it happens on fast days and when I've accidentally skipped lunch or didn't have enough dinner, etc.
