Why am I giving recipes on a fast day? Not that I'm fasting, but still...



Spinach Kugel pareve/pesadich

1 red onion, choppped
1/2 1lb bag frozen chopped spinach, thawed
1/4 cup matzo meal
2 eggs, beaten
Optional: handful shelled pistachios
Nutmeg
Salt
Pepper

Oil for frying

Saute red onion in oil until soft and just starting to brown. Add to rest of ingredients. Mix with hands until combined. Put mixture into loaf pan. Bake at 350F for about an hour or until firm and slightly brown on top. Serves four.

It was already over here when you posted it, if that helps :P (I would have hated recipes to show up on my friends page when it wasn't over ;] For the last hour and a half, I was really hungry, and I tried to get my mind off it with the aid of, um, LiveJournal. Very frum of me.)

I think I'll try this. I have, like, two boxes of matzo meal I have no clue what to use for, and I really want to eat vegetables. It must sound stupid but I've been craving vegetables for the past week or so...

*reminds herself to buy spinach tomorrow*

yum, thank you for posting this! it even looks easy enough that I probably couldn't mess it up ;p

of course, I don't cook enough to have matzo meal on hand...guess I'll have to remember to pick some up the next time I head to the kosher butcher!

if you add the optional pistachios, how would you use them? chopped up as a topping? added before or after cooking?

Bread crumbs would work as well.

You just add the pistachios with everything else. It's that easy.

I tend to end up grocery shopping on fast days, too, maybe 'cause there so much extra time from not eating? ;-)
(The worst is going by something that's cooking, like rotisserie chicken.)

I completely forgot about the fast. I remember drinking before bed last night, because I knew the fast was coming and I wouldn't be able to drink again until it got dark, but when I woke up this morning it had completely slipped my mind, and I didn't remember until just now. Oh well. I suppose I should fast another day to make up for it, but I probably won't.

It's an easy one to forget, though. Ta'anit Esther has Purim, Tzom Gedalia has Rosh HaShanah and Yod Zayin Tevet begins the Three Weeks. 10th of Tevet isn't tied to anything else in the calender.

I know I'm hungry when I catch myself thinking up recipes when I'm not actively trying to plan a meal. I think it's an effect of hungry + not eating, since it happens on fast days and when I've accidentally skipped lunch or didn't have enough dinner, etc.
