Dinner tonight

I made
cellio's spinach and egg dish. I saute'd red onion and garlic in olive oil, with a touch of allspice, and mixed it with baby spinach (all the spinach my local market had) and crumbled Israeli feta cheese. I put this in a casserole and carefully dropped in four eggs. It took about a half hour or so for the eggs to cook. We each got two eggs and the greens around them, to which I added pepper.
It was delicious. Light and flavorful and the eggs came out perfectly. I served it with fancy oven fries (frozen potatoes with rosemary, garlic and olive oil. I think I'm going to try this with fresh potatoes because they were yummy.)
