HELP!
I'm calling on those wise in the ways of tofu!
I just opened a package of extra firm tofu, which is usually smooth.
This one is riddled with small holes and looks spongelike.
It smells and tastes just fine, but I'm afraid of it.
Do I need to be?

With that texture, it's probably been frozen. So long as it smells and tastes fine, it's fine. And it will soak up a marinade beautifully.

Both comments I saw were correct but it could also be "dry" tofu (which is what we get) and it has that kind of texture. It's great to cook with because it's, like, pre-drained/pre-watersquishedout and it cubes up well.
